Cottage cheese, vegetables and Bom Petisco toast

120g   Bom Petisco tuna in brine
250g   Curd cheese
1 tablespoon   Chopped courgette
1 tablespoon  Chopped carrot
1 tablespoon   Chopped black olives
1 tablespoon   Chopped green olives
1 tablespoon   Chopped leek
1 tablespoon  Celery root
2 tablespoon   Chopped chives
10 slices   Toasted Alentejo bread
To taste   Extra virgin olive oil
To taste   Fleur de sel
To taste   Ground black pepper

Instructions

Blanch the vegetables (courgette, carrot, leek and celery root) in boiling salted water for 1 minute. Cool them using water and ice, drain well and place on absorbent paper towels, to remove the excess water.
In a bowl, mix the tuna with the cottage cheese, vegetables, olives and chives.
Season with fleur de sel and ground pepper.

Tips

You can replace the chives with basil or coriander and use vegetables such as pumpkin or turnip, as you please.
