BOM PETISCO GAZPACHO
INGREDIENTS
2 x 120 g Bom Petisco tuna
2 chopped tomatoes
1 chopper cucumber
2 tbsp. chopped red onion
1 chopped red bell pepper
1 tsp. chopped garlic
3 tbsp. extra virgin olive oil
1 tbsp. red wine vinegar
2 tbsp. pennyroyal leaves
Fleur de sel
Black pepper (from mill)
INSTRUCTIONS
Place the red onion and garlic in a bowl. Marinate in vinegar, olive oil, salt and pepper for 10 minutes.
Add the tomato, cucumber, red bell pepper and pennyroyal.
Finish and presentation
Serve the marinated vegetables, then top it with the flaked tuna and perfume with pennyroyal.
Tips
Peel and remove the seeds from the tomato, pepper and cucumber – this will make a nicer salad.
Garnish the salad with croutons. You may replace the pennyroyal with coriander.
