BOM PETISCO “CALDEIRADA”
INGREDIENTS
2 x 120 g Bom Petisco tuna
100 g red bell pepper
100 g tomato
2 garlic cloves
80 g onion
300 g potato
2 tbsp. chopped parsley
1 bay leaf
300 g cockle
Extra virgin olive oil
White wine
Traditional sea salt
Ground black pepper
INSTRUCTIONS
Start by peeling the red bell pepper and the tomato. Remove the seeds. Separately, cut the garlic, the onion and the potato in slices.
Put the olive oil, the bay leaf and the pepper in a pan. Let it cook for a few minutes. Add the garlic and the onion and pour with white wine. Let simmer for 1 minute and add the tomato and the potato in layers. Season with salt, cover and let cook in low heat.
When the potato is cooked, add the cockle and parsley, then cover so the cockle cooks.
When the cockle opens, remove from the stove and add Bom Petisco tuna.
