ASPARAGUS, SWEET POTATO AND BOM PETISCO AZORES PEPPER “CATAPLANA”
2 x 120 g Bom Petisco Azores Pepper and Fine Herbs
2 cloves sliced garlic
1 sliced onion
1 sliced peeled bell pepper
4 un peeled tomato in petals
8 un white asparagus
8 un green asparagus
2 un sliced sweet potato
0,5 dl extra virgin olive oil
1 dl sparkling wine
Traditional sea salt
In a cataplana, add the olive oil, bell peppers, onions, garlic, sweet potato and asparagus in layers. Season each layer with salt.
Add the sparkling wine, close the cataplana and let it cook for 15 minutes.
Open the cataplana, add Bom Petisco Azores Pepper and Fine Herbs and perfume it with pennyroyal. Close the cataplana again and let it rest for 1 minute.
