BOM PETISCO “À BRÁS”
INGREDIENTS
3 x Bom Petisco tuna
150 g sliced onion
3 sliced garlic cloves
1 bay leaf
350 g straw potatoes
4 eggs
2 egg yolks
Extra virgin olive oil
White wine
Chopped parsley
Traditional sea salt
Ground black pepper
INSTRUCTIONS
Sauté the onions and garlic with bay leaf and olive oil. Drizzle with white wine and let it heat for one minute.
In a separate bowl, mix the eggs, yolks, parsley, salt and pepper. Add it to the onion, stirring constantly over low heat.
When the egg starts to be creamy, add the straw potatoes, wrap it and remove from the heat. Add Bom Petisco tuna and serve.
