BOM PETISCO AND SWEET POTATO “EMPADÃO”
INGREDIENTS
2 x 120 g Bom Petisco tuna
4 un sweet potato
120 g chopped onion
3 chopped garlic cloves
Extra virgin olive oil
1 dl white wine
Ground black pepper
Chopped chives
Nutmeg
1 egg yolk
1 bay leaf
INSTRUCTIONS
Cook the unpeeled sweet potatoes in water seasoned with salt. Peel the potatoes and reduce them to puree.
Prepare a pan with olive oil and onion, garlic and bay leaf. Pour the white wine and let simmer for a minute.
Season with salt, Pepper and nutmeg. Add Bom Petisco and perfume with chopped chives.
Put half of the puree in an oven tray and the mixture with Bom Petisco. Overlay the remaining puree and brush with egg yolk and gratin in preheated oven.
Tips
To make a different sauce, mash coriander and boiled apple with a little extra virgin oil.
